Don't forget the Puppies

During a recent weekend Ally and I headed to several events around the Chattanooga area held at different shops. We had a great time at Super Street on Cloud Springs as well as a cool time at Ultimate Cycle before ending the day with a big plate of barbecue from a favorite restaurant. Ahhh, the sweet life.

While at Super Street a couple we met said they were getting ready to have a shrimp boil and did I have any suggestions for something besides the normal bag of frozen hushpuppies from the store. Ally and I tried this recipe a while back and thought it would fit the bill. It’s simple and you can double it as needed.

Crawfish Puppies

1/2 cup self rising flour
1 cup corn meal
1/2 cup minced crawfish meat or shrimp
1 onion, chopped fine
1 egg
1 teaspoon sugar
Buttermilk
vegetable oil
Salt, pepper and cayenne pepper to taste

Mix flour, corn meal, crawfish, onion, egg, and sugar with enough buttermilk to make a thick batter. Drop by teaspoonfuls into deep hot oil.  Fry until golden brown.
