Pass the Meatloaf - A Request

A reader, Terry from Alabama, emailed and asked for a recipe that I spoke about in one of my radio spots. I thought I would share it with everyone. I know Christmas and the holidays are still fresh in everyone’s mind. That means we are all probably still staying away from turkey and ham.
            The reader asked for one of my meatloaf recipes that had a “Tex-Mex” twist to it. They needed something filling that did NOT contain turkey, ham or was a chili. The recipe is Tortilla Meatloaf. It’s easy, filling, full of flavor, and you can add just about anything to it in order to fit your own tastes.
            And yes, you can use ground turkey if you wish.  Hope you enjoy it.

Tortilla Meatloaf
2 pounds ground beef
1 cup crushed plain tortillia chips
1 small fine minced onion
1 small fine minced green pepper
2 eggs beaten
1/3 cup worcestershire sauce
1/4 cup soy sauce
1 teaspoon garlic powder
1 teaspoon cumin powder
1 teaspoon black pepper
Black pepper
Paprika
1 can diced chilies and tomatoes

Combine all ingredients in a large bowl and completely mix together. Form into a loaf and bake at 350 degrees for about 45 minutes. Test for firmness in the center. Before removing from oven top with 1 can diced chilies and tomatoes, paprika and black pepper. Cook an additional 10-15 minutes.
