Cold Day Comfort Food
Man was it cold during the 2008 Fort Olgethorpe – Ringgold toy run. Man, I mean COLD! Ally and I made the run with toys strapped to the back of the motorcycle and noted the temperature on one of the signs on Battlefield Parkway. The sign read 32 degrees. With an average speed of 45 mph, and sometimes 65mph, that translates to somewhere in the low teens to low 20’s depending on speed. I guess I get colder as I get older. I used to wear shorts to outdoor hockey practice!

It was a great ride, the media said over 1000 bikes of all makes took part. Of course Santa was there as well as many elves. By the time Ally and I rode home we were frozen, leather and all. But after a few minutes inside warming up to a good Christmas movie we decided some good old comfort food was needed. Hot cheese dip and chips. Here is my super secret recipe for hot bacon cheese dip on a cold day.

  • Kent’s Pepper Jack Bacon Cheese Dip
  • 1/2 pound Pepper Jack cheese sliced or cubed
  • 1/2 cup shredded cheddar or white American
  • 1/2 tablespoon minced jalapeno or hot sauce
  • 1/3 cup milk plus as needed
  • Bacon bits

Combine everything in a small sauce pan over low heat and stir until melted. You can add more cheese, milk, bacon, sour cream, cream cheese, sausage, salsa… whatever you like. Heat and eat. This makes a great dip on a cold day. And, you can thin it out with milk, toss in some cream corn and have a pretty tasty twist on a bowl of chowder.
